On a still life the flag protects texture: raking light only reads as relief while nothing is filling the valleys, so opening that side lifts it nearly two stops and the crust flattens even though the key never moved.

Key notes

1Place the key low and side-on so texture reads — overhead keys flatten crust and steam.
